Today was one of those days where I didn’t want to workout at all, the weather getting colder and the days getting darker doesn’t help.  Usually on leg day, I get up bright and early ready to conquer some heavy weights and the dreaded hack squat but I was a little off-beat for some strange reason.  But I made a decision to cook something yummy and ONLY eat it if I worked out.

 

 

Well, there’s nothing like a bit of good food to get you out of a funk and get you squatting and deadlifting right! So here’s is a little yummy fish soup recipe I put together and yes, I absolutely demolished this without a second thought after my workout.

I hope you enjoy it as much as I did and get the entire family involved too.

INGREDIENTS

1 seabass fillet (or as many needed if cooking for the family)

300g uncooked peeled prawns

2 large potatoes, diced

2 large carrots diced

1 medium onion roughly diced

Baby spinach

500ml fish stock

1 tablespoon coconut oil

1/2 can coconut milk

Salt and pepper to taste.  You can add whatever other seasoning you like.

Add one tablespoon of coconut oil to a large pan/pot.  Fry the potatoes and carrots along with some salt and pepper. Allow to simmer at a medium heat for about 10 minutes then add onions and saute. Set aside.

Take the other tablespoon of coconut oil and fry the seabass fillets until slightly crisply on each side. Bring the potato mixture back to the boil on a moderate heat and add the prawns, coconut milk and fish stock.  Reduce heat and simmer until the potatoes are softened.  Put soup in bowls and place the sea bass fillets on top.

Serve immediately. Add a handful of spinach, red onion and feta cheese to the bowl if you like and enjoy!! xx
